This item is a sandwich cookie made from two circular almond flour-based shells and piped buttercream filling. It tastes like pistachios. The shells were leavened thanks to whipped egg foam. The crinkly part where they rose off the pan is called the "foot". It is important that the shell not travel or slide on its foot. Do not confuse it with a macaroon (which is made of coconut, not almond; count the Os) or a macron (which may be used to form long Os).
